SURA PUTTU

Sura puttu or fish(shark) scramble is a traditional and, the most popular dish of Tamil Nadu, especially in the coastal areas. Fish puttu can be made with any kind of fish but, traditionally it is made only with shark(sura).

Shark is said to have a lot of health benefits. It is a great source of protein and omega 3 acids. In our tradition, shark is one of the main food given to lactating mothers, to increase the supply of breastmilk. We make so many dishes using shark and, sura puttu is one among them.

Shark is steamed and sauteed with onions and few other spices. It is not so spicy and, also has very less oil. It goes really well with any kind of rice. A tablespoon of puttu can also be placed between bread slices and, toasted with butter/ghee to make fish sandwich. This can be a great after school snack for the kids.

ABOUT THE RECIPE:

Sura puttu is an easy to make recipe, made with very few ingredients available in home. We make this recipe quite often in our home since, this actually helps to increase the level of haemoglobin which, I have experienced personally. It takes a maximum of 30 minutes to make.

INGREDIENTS FOR SURA PUTTU:

  • SHARK – 500 GMS
  • ONIONS (MEDIUM SIZE) – 4 NOS
  • GREEN CHILLIES (MEDIUM SPICY) – 2 NOS
  • GARLIC (PEELED) – 10 ~ 15 NOS
  • TURMERIC POWDER – 1/2 TSP (TO STEAM FISH)
  • CHILLY POWDER – 1 TSP
  • GARAM MASALA – 1/2 TSP
  • PEPPER POWDER – 1 TBSP
  • SALT – AS REQUIRED
  • OIL – 2 TBSP
  • CURRY LEAVES – 10 ~ 15 NOS

HOW TO MAKE SURA PUTTU:

  • Clean the shark with rock salt.
  • Add the cleaned shark to a cooking pot and, add 1/2 teaspoon of turmeric powder to it.
  • Add water until, the fish is completely submerged in the water.
  • Turn on the flame, and place the pot. Let it boil.
  • Fish takes a maximum of just 3 minutes to cook. The fish has to fall apart when trying to take it out. This is the perfect consistency. Once the fish is cooked, turn off the flame.
  • Transfer the fish to a plate filtering all the water and, let it cool down.
  • Meanwhile, heat a kadai and add 2 tbsp of oil to it.
  • Once the oil is heated, add the garlic to it, and saute it for 1 minute.
  • After 1 minute, add the onions to it and, mix well until, the onions are coated in the oil.
  • Add the salt to it. Adding salt helps the onions to cook faster.
  • Once the onions turn translucent, add the green chillies to it.
  • Then turn the flame to low and, add the 1 tsp of chilly powder and 1/2 tsp of garam masala to it, and mix well.
  • The fish would have cooled down completely. Remove the bones and skin from the fish and discard them. Gently mash the fish using hands. It will be so soft and, can be easily done with hands.
  • Add the mashed fish to the kadai.
  • Mix everything well and, then add 1 tbsp of pepper powder to it.
  • Let it cook on medium flame for 2 minutes. Then turn the flame to low and cook it for another 2 minutes.
  • Take some amount of puttu in a spatula and, shake it. It shouldn’t be sticky and has to fall apart. This is the perfect consistency.
  • At this stage add curry leaves.
  • Mix everything well and, turn off the flame.

YUMMY AND DELICIOUS SURA PUTTU READY.

SERVE IT WITH ANY KIND OF RICE OR, IT CAN ALSO BE MADE TO A FISH SANDWICH.

I HAD MY SURA PUTTU WITH HOT RICE AND SURA MEEN KULAMBU.

VARIATIONS:

  • Adding garlic is optional. It doesn’t really alter the taste of the dish.
  • Adding green chillies is also optional. It reduce the spiciness of the dish.
  • Spiciness of the dish can also be adjusted by reducing the amount of chilly powder and pepper powder added to it.
  • This recipe can be made with any kind of fish. Salmon, tilapia and king fish can also be used.

PRO TIPS:

  • Make sure to get paal(milk) sura. There are so many kinds of shark, but paal sura is the only variety, best suited for this recipe.
  • It has to be cooked until it is dry and non sticky. It might have the raw fishy flavour, when it is not cooked properly.

NOTE:

The fish takes a maximum of just 3 to 5 minutes to cook.
