SURA MEEN KULAMBU

Sura meen kulambu or shark curry is a traditional dish of Tamilnadu. There are so many kinds of shark but, paal(milk) sura is the kind of shark used to make this curry.

In our culture, there is a certain diet for a new mom that, we have been following for generations. Only certain foods are allowed and, shark is one of the main food. Any recipe made with shark, is actually a postpartum recipe. Shark is the best food for lactating mothers since, it helps to increase the supply of breastmilk.

ABOUT THE RECIPE:

We have been making this recipe in our home for generations. Since, it is a post partum recipe, we add a lot of pepper and garlic to it. It is a spicy dish and, it goes really well with rice and any kind of breakfast.

*Even though the skin of the shark appears soft and smooth, it actually has a grainy texture while touching. When it’s cooked with the skin, it might spoil the taste of the recipe. So, it is better to peel the skin, of the shark before cooking.

INGREDIENTS FOR SURA MEEN KULAMBU:

  • SHARK (SKINLESS) – 500 GMS
  • KULAMBU POWDER – 4 TBSP
  • PEPPER POWDER – 1 TBSP
  • GARLIC(PEELED) – 10 ~ 20 NOS
  • TAMARIND – ONE LARGE LEMON SIZE
  • THALIPPU VADAGAM – 1 TBSP
  • SALT – AS REQUIRED
  • OIL – 2 TBSP

HOW TO MAKE SURA MEEN KULAMBU:

  • Wash and clean the shark with rock salt.
  • Soak the tamarind in water for 30 minutes.
  • After 30 minutes, squeeze it and extract the puree.
  • Add the 4 tbsp of kulambu powder, 1 tbsp of pepper powder and salt to the tamarind puree and, mix everything well. Keep it aside.
  • Heat a cooking pot, and add 2 tbsp of oil to it.
  • Once the oil is heated add, 1 tbsp of vadagam to it.
  • Then add the peeled garlic to it and, saute it for 30 seconds.
  • Then add the tamarind mixture to it. Also add 1 cup of water to adjust the consistency.
  • Then add the cleaned fish to it.
  • Mix everything well. Cover it with a lid.
  • Let it cook on medium flame for 2 minutes and, then on low flame for 20 minutes.
  • The lid has to be opened only after 20 minutes. The fish cooks really well and, wouldn’t have the raw smell to it.
  • After 20 minutes, open the lid and, check for the consistency. It has to be slightly thick and, also should have the pouring consistency.
  • At this stage add the curry leaves and, turn of the flame.

YUMMY AND DELICIOUS SURA MEEN KULAMBU IS READY.

SERVE IT WITH HOT STEAMED RICE OR ANY KIND OF BREAKFAST.

I HAD MY SURA MEEN KULAMBU WITH HOT STEAMED RICE, PAIRED WITH SURA PUTTU.

VARIATIONS:

  • This recipe can be made with salmon instead of shark.
  • The amount of kulambu powder added can be reduced, to adjust the spiciness of this dish.

PRO TIPS:

  • Paal sura is the only variety of shark that works for this recipe.
  • It is mandatory to cook it covered for 20 minutes. This helps to cook the fish really well.
