SPICY FRIED CHICKEN (RESTAURANT STYLE)
Jump to Recipe

Fried chicken is one of the popular appetizer made by marinating the chicken pieces in a spice mixture, and then deep-frying them until crispy on the outside and juicy on the inside. The chicken is usually marinated or seasoned beforehand to add flavour and tenderness.

Spicy fried chicken uses a light, well-seasoned coating instead of a thick, heavy batter. This light coating helps the chicken to have a uniform crispness without being greasy. It is spicy, but has a balance of flavours without overpowering the taste of the chicken. Spicy fried chicken is most commonly served as an appetizer in weddings, functions or party buffet.

ABOUT THE RECIPE:

Spicy fried chicken can be made with any kind of chicken pieces. I’ve used chicken drumstick for this recipe. This recipe can also be made with either whole chicken or small bite-sized boneless pieces.

This is an easy, make-ahead recipe, with the basic Indian spices. The perfect flavour and tenderness of the chicken can be achieved by marinating the chicken for at least 2 hours. If you use larger pieces of chicken or whole chicken, make sure to marinate and refrigerate it for at least 4 hours or overnight.

INGREDIENTS FOR SPICY FRIED CHICKEN:

Five small bowls containing spices and ingredients: chili powder, salt, garam masala, corn starch, ginger garlic paste, and lemon juice, arranged on a wooden surface.

HOW TO MAKE SPICY FRIED CHICKEN:

  • Clean and wash the chicken pieces thoroughly with water. Also, make few slits over it. This helps the chicken to marinate well.

  • Do not turn it immediately. Let it fry for 1 minute on medium-high flame, and then turn it. Fry it until it turns deep reddish brown and crispy.

  • Once it turns deep reddish brown and crispy, filter the oil and transfer it to a plate with tissue paper. The tissue paper helps to absorb the excess oil.

  • Repeat the process with the remaining marinated chicken.
