GREEN CHUTNEY

Green chutney is a fresh, vibrant Indian condiment made primarily from green herbs like coriander leaves and mint leaves blended with green chillies, lemon juice and few other spices. It has a bright green color, a refreshing aroma and a balanced flavour that’s spicy, tangy and slightly herbal.

Green chutney is commonly served with snacks such as samosas, pakora, kachoris and grilled dishes. It is one of the main ingredient to make any kind of chats. Also, it is used as a spread in making sandwiches. The green chutney adds a zesty kick and enhances the overall taste of the meal.

ABOUT THE RECIPE:

This is an easy-to-make recipe. It doesn’t involve any cooking. This chutney can be stored in the freezer for about 1 month. Add the chutney to the ice mould and gently tap to remove air bubbles. Then freeze it. Once frozen, remove chutney cubes and transfer them to an airtight freezer bag or container.

To use them, take out 1 or 2 cubes as needed and thaw them at room temperature or in a refrigerator. Do not reheat it. Reheating might change its color and taste. Also, avoid refreezing once thawed.

INGREDIENTS FOR GREEN CHUTNEY:

  • CORIANDER LEAVES – 1 CUP
  • MINT LEAVES – 1/2 CUP
  • FRIED CHANNA DHAL – 1/4 CUP
  • GREEN CHILLIES – 4 NOS
  • LEMON JUICE – 1 NO.
  • GINGER (PEELED) – 1 INCH
  • GARLIC (PEELED) – 5 NOS.
  • CUMIN POWDER – 1 TSP
  • CHAT MASALA – 1 TSP
  • SUGAR – 1/2 TSP
  • BLACK SALT – 1/2 TSP
  • SALT – AS REQUIRED

HOW TO MAKE GREEN CHUTNEY:

  • Add all the ingredients along with 3 to 4 ice cubes to a blender. The ice cubes helps to maintain the color of the green chutney.

YUMMY AND DELICIOUS GREEN CHUTNEY IS READY.

IT CAN BE EITHER SERVED AS A SIDE DISH FOR SNACKS OR CAN BE USED TO MAKE CHATS AND SANDWICHES.

I USED GREEN CHUTNEY TO MAKE ALOO TIKKI CHAAT.

PRO TIPS:

Since, we use fresh herbs for this recipe, the color of the chutney might slightly darken with time, even when frozen. Even, if color darkens slightly, it’s normal and still safe to eat. Freezing it immediately, after blending might help to maintain the green color for a long time.
