COCONUT PRAWN FRY

Coconut prawn fry is an easy-to-make recipe, which can be made within 15 minutes. The prawns are marinated with spices, and then shallow fried with fresh or desiccated coconut. This recipe works great to be served for functions and parties.
ABOUT THE RECIPE:
I usually make this recipe with desiccated coconut. The desiccated coconut has a mild coconut oil flavour to it, which enhances the flavour of this recipe. Fresh grated coconut can also be used. Fry the fresh grated coconut in oil for about 15 seconds, and then add to the recipe. This might help to enhance the flavour of the coconut.
INGREDIENTS FOR COCONUT PRAWN FRY:
- PRAWNS(CLEANED/DEVEINED) – 500 GMS
- CHILLY POWDER – 1 TBSP
- CORIANDER POWDER – 1/2 TBSP
- CUMIN POWDER – 1/2 TSP
- PEPPER POWDER – 1/2 TSP
- GINGER GARLIC PASTE – 1 TBSP
- CURRY LEAVES – 10~20 NOS.
- DESICCATED COCONUT – 1 TBSP
- SALT – AS REQUIRED
- OIL – 3~4 TBSP

HOW TO MAKE COCONUT PRAWN FRY:
- Clean, devein and wash the prawns thoroughly with water and, add it to a mixing bowl.

- Add 1 tbsp of chilly powder, 1/2 tbsp of coriander powder, 1/2 tsp of pepper powder, 1/2 tsp of cumin powder, salt and 1 tbsp of ginger garlic paste to the prawns.

- Mix everything well. Cover it and let it rest for 30 minutes.

- After 30 minutes, heat a pan and add 3 tbsp of oil to it.

- Once the oil is heated, add the marinated prawns to it.

- Also, add the curry leaves to it and mix it.

- Cook it on medium-high flame. Do not add any water to it. The prawns oozes out water and gets cooked. Cook it until the water dries out.

- Once the water dries out, turn the flame to medium-low. Let it cook until the oil start to separate.

- Once the oil starts to separate, add 1 tbsp of desiccated coconut to the prawns. Mix it and turn off the flame.
*Do not cook it for a long time, since the desiccated coconut might start to ooze out oil and alters the taste of the recipe.

YUMMY AND DELICIOUS COCONUT PRAWN FRY IS READY.

SERVE IT EITHER AS A STARTER OR AS A SIDE DISH TO YOUR FAVOURITE RICE.
I HAD IT WITH RICE AND COCONUT PRAWN CURRY.

VARIATIONS:
