ROSE POPSICLE

Rose popsicle is a refreshing frozen treat that has a delicate, floral sweetness of roses in a cool, soothing form made using rose syrup or rose essence. It has a light pink to deep rosy color with a gentle sweet flavour. Rose popsicle is a perfect treat for hot days. It feels both cooling and calming – almost like enjoying a frozen version of rose sherbet.

Rose popsicle can be made in two different methods. The most common method is made by pouring ROSE MILK into the popsicle mould and frozen until set. The rose popsicle made using this method is slightly watery compared to the other method, where cornstarch slurry is added as a thickener. Adding cornstarch gives a much thick and creamy texture to the popsicle.

ABOUT THE RECIPE:

Rose popsicle can be made either with rose syrup or rose essence. Rose syrup is a rose flavoured sugar syrup, whereas the rose essence is just white rose essence with pink food color. I’ve used homemade ROSE SYRUP for this recipe.

Using rose syrup for this recipe doesn’t require any additional sugar. But, using rose essence might need additional sugar. For 1/2 litre of milk, add 1 tsp of rose essence and 1/2 cup of sugar.

INGREDIENTS FOR ROSE POPSICLE:

  • FULL FAT MILK – 1/2 LITRE
  • ROSE SYRUP – 1/2 CUP (8 TBSP)
  • CORN STARCH – 1 TBSP

HOW TO MAKE ROSE POPSICLE:

  • Add 1 tbsp of cornstarch to a bowl along with 1/4 cup of water. Mix it well and keep it aside.

  • Add 1/2 litre of full fat milk to a cooking pot.

  • Turn on the flame, and place it on the stove. Let it come to boil.

  • Once it starts to boil, add the rose syrup to it.

  • Mix it well and let it come to boil.

  • Once it starts to boil, add the cornstarch slurry to it. It will start to thicken as soon as the cornstarch is added to it.

*Mix it continuously while adding the cornstarch. It might thicken and form lumps if it is not mixed continuously.

  • Once it start to thicken, turn off the flame. Let it cool down completely.
  • Once it cools down completely pour it into the popsicle mould, cover it and freeze for 6 to 8 hours.

  • After 6 to 8 hours, remove it from the freezer. Dip it in warm water and remove the popsicle from the mould.
