MASALA EGG FRY

Masala egg fry can be made with so many variations. The spices added differs from each recipe. It can be made with just, chilly powder and salt and, can also be made with other spices added to it. But, each recipe has its own unique taste and flavours to it.
ABOUT THE RECIPE:
This recipe can be made, only with hard boiled egg. There are so many recipes that we make with boiled egg and, this is one of the most commonly made recipe in our home. We use freshly prepared homemade masala for this recipe, which gives all the flavour for this dish.
I’ve used 4 eggs in this recipe. The masala used in this recipe will be sufficient for 4 eggs. Adjust the ingredients of the masala, according to the number of eggs used.
INGREDIENTS FOR MASALA EGG FRY:
- EGGS – 4 NOS.
- FENNEL SEEDS – 1/2 TBSP
- CHILLY POWDER – 1 TBSP
- ONION (CHOPPED) – 1 TBSP
- SALT – AS REQUIRED
- OIL – 4 TBSP

HOW TO MAKE BOILED EGG:
- Boil 500 ml of water in a pot.

- Once it starts to boil, add 4 eggs and a teaspoon of salt to it.

- Boil it on high flame for 20 – 25 minutes.
- After 20-25 minutes turn off the flame.

- Remove the eggs from the pot and, let it cool down.
- Once it cools down completely, gently tap the egg on a hard surface. It will form cracks on the egg.
*This helps to peel the shell, easily from the eggs.

- Peel the shell completely from the eggs and, place it on a clean plate.

BOILED EGG IS READY.
HOW TO MAKE MASALA EGG FRY:
- Cut the boiled and peeled eggs into half and, keep it aside.

- Add the chopped onion, 1/2 tbsp of fennel seeds, 1 tbsp of chilly powder and salt to a blender.

- Add little water and, blend them to a fine paste.

- Add the blended masala to the boiled eggs. Coat the masala on all sides of the egg.
- Let it rest for 10 minutes.

- Heat a pan and, add 3 tbsp of oil to it.

- Once the oil is heated, add the marinated eggs to the pan.

- On medium flame, fry the egg for 3 minutes on each side.
- After 3 minutes on each side or, once the masala turns dark brown in color, turn off the flame, and transfer it to a plate.

YUMMY AND DELICIOUS MASALA EGG FRY IS READY.
SERVE IT WITH YOUR FAVOURITE RICE.

PRO TIPS:
- Only hard boiled eggs works well for this recipe.
- To make a hard boiled egg, it has to be boiled for at least 20 minutes.
- Since the eggs are already cooked completely, frying it for 2 to 3 minutes on each side is more than enough.
- Make sure the masala is cooked properly. The masala has to turn to dark brown in color.
NOTE:
Cooking the boiled eggs can be tricky since, overcooking the boiled eggs might make them burst. To avoid this, at the final stage of cooking, turn the flame to low and, frequently turn the eggs in an interval of 5-10 seconds, until the masala gets cooked completely.
