CHICKEN QUESADILLA

The tortilla is cooked until it is golden brown and crispy on the outside, while the inside stays gooey and flavourful. Sauteed peppers and onions can also be added to the recipe. It is commonly sliced into wedges and served along with salsa, sour cream or guacamole on the side.
ABOUT THE RECIPE:
I modified the seasoning to suit my taste bud. I generally use different types of seasoning for the chicken, depending on the people I serve. I use hot, spicy seasoning while serving for adults, and mild, non-spicy seasoning while serving for kids. I made this recipe using basic Indian spices for seasoning. This recipe has medium spiciness to it, and can be served for all age groups.
I’ve used mozzarella and cheddar cheese for this recipe. Any melting cheese can be used.
INGREDIENTS FOR CHICKEN QUESADILLA:
FOR COOKING CHICKEN:
- BONELESS CHICKEN THIGHS – 500 GMS
- CURD/YOGHURT – 1/4 CUP
- CHILLY POWDER – 1 TBSP
- GARAM MASALA – 1/2 TSP
- GINGER GARLIC PASTE – 1 TSP
- SALT – AS REQUIRED
- OIL – 2 TBSP
FOR CHICKEN QUESADILLA:
- FLOUR TORTILLA – 4 NOS
- CHEESE – 1 CUP
- COOKED CHICKEN – 1/4 CUP (FOR 1 QUESADILLA)
- OIL – 2 TSP
HOW TO MAKE CHICKEN QUESADILLA:
- Add the cleaned and washed chicken to a mixing bowl.

- Add curd, chilly powder, garam masala, ginger garlic paste and salt to it.

- Mix everything well and let it rest for 30 minutes.

- After 30 minutes, heat a pan and add 2 tbsp of oil to it.
- Once the oil is heated, add the marinated chicken pieces to the pan.

- On medium-high flame, cook it for about 5 to 6 minutes on each sides.

- Once it is completely cooked, transfer it to a plate, and chop them to small bite sized pieces.

- Add 1/4 of chopped cooked chicken to the flour tortilla along with 1/4 cup of cheese.

- Fold the tortilla. Repeat the process with all the tortilla.

- Heat a pan/griddle. Brush little oil to the pan and place the tortilla onto the pan.

- Cook it on both sides until it turns light golden brown and crispy. Once it turns crispy, transfer it to a plate.

YUMMY AND DELICIOUS CHICKEN QUESADILLA IS READY.
