Biryani is a rice dish, with a combination of spices added to it. Any kind of biryani, might be a vegetarian or non vegetarian, the flavour of the dish comes mainly from the spices added to it. Biryani masala is a spice mix, specifically crafted for biryani.

Each state in India has its own way of making biryani. Even in the state of Tamilnadu, we have so many different kinds of biryani, which varies from each city. Dindigul biryani is one of the most popular kind of biryani from the city of Dindigul, Tamil Nadu.

Dindigul biryani is made with aromatic seeraga samba rice and a special spice blend. The spice blend or the Dindigul biryani masala is made with freshly ground spices along with cashews. This biryani masala is the main ingredient that gives all the flavour for this biryani.

ABOUT THE RECIPE:

Dindigul biryani masala tastes good, when it is made fresh. But, Dindigul biryani masala can be stored at room temperature for a maximum of about 1 month. Since, cashews are added to this recipe, it cannot be stored for a long time.

This biryani masala can be used for both vegetarian and non vegetarian Dindigul style biryani.

INGREDIENTS FOR DINDIGUL BIRYANI MASALA:

  • CORIANDER SEEDS – 2 TBSP
  • PEPPERCORNS – 1 TBSP
  • CUMIN SEEDS – 1 TBSP
  • FENNEL SEEDS – 1 TSP
  • STONE FLOWER – 1 TBSP
  • STAR ANISE – 2 NOS.
  • CLOVES – 1 TSP
  • CARDAMOM – 1 TSP
  • CINNAMON – 2 INCH
  • JAVITRI – 2 NOS.
  • BAY LEAF – 3 NOS.
  • CASHEWS (WHOLE) – 10 NOS.

HOW TO MAKE DINDIGUL BIRYANI MASALA:

  • Add all the ingredient to a blender. Make sure the blender is clean and dry.
