ALOO TIKKI CHAAT

Aloo tikki chaat is a classic Indian street food that’s crispy, tangy. spicy and totally addictive. It is made with aloo tikki, a golden-fried snack made with mashed potatoes. Aloo tikki chaat has a crispy outer, soft inside with a sweet, sour and spicy flavour all at once.

Golden- fried aloo tikkis or spiced potato patties are topped with creamy yogurt, zingy tamarind chutney, spicy green chutney with a sprinkle of chaat masala and roasted cumin powder. It’s finished with crunchy sev, chopped onions and fresh coriander, giving a perfect balance of flavours and textures in every bite.

ABOUT THE RECIPE:

This recipe has to be served immediately, while it’s still hot. The potato patties can be made ahead and stored in the freezer, and can be fried when needed.

I’ve used sweet curd for this recipe. To make sweet curd, add 1 tbsp of sugar to 1 cup of curd and mix it well.

INGREDIENTS FOR ALOO TIKKI CHAAT:

TO MAKE ALOO TIKKI:

  • POTATO (MEDIUM SIZE) – 3 NOS.
  • RICE FLOUR – 3 TBSP
  • CORN STARCH – 3 TBSP
  • SALT – AS REQUIRED
  • OIL – 1/2 CUP

TO MAKE ALOO TIKKI CHAAT (FOR SINGLE SERVING):

  • TAMARIND DATE CHUTNEY – 2 TBSP
  • GREEN CHUTNEY – 2 TBSP
  • SWEET CURD – 4 TBSP
  • ROASTED CUMIN POWDER – 1/2 TSP
  • CHAAT MASALA – 1/2 TSP
  • SEV – 2 TBSP
  • ONIONS (CHOPPED) – 2 TBSP
  • CORIANDER LEAVES – FOR GARNISHING

HOW TO MAKE ALOO TIKKI:

  • Cut the potatoes in half, along its length and add them to the pressure cooker. Also, add water to it, cover it and pressure cook it for 3 whistles.

  • After 3 whistles, turn off the flame. Once the pressure is released completely, open the lid.
Peeled and halved potatoes in a stainless steel bowl.
  • Drain the water, peel the skin and grate it.

  • Add 3 tbsp of rice flour and 3 tbsp of cornstarch along with salt and mix everything well. It should have a dough consistency.

  • Divide them into portions. Roll it, place it between the palm and gently press it. Tap the sides to perfect its shape. This recipe makes around 12 medium size patties. These can be frozen and fried when needed.

  • Heat a pan and add 1/2 cup of oil to it. Once the oil is heated, add the pattice to it. Add 2 or 3 at a time. Do not add more that that.

  • On medium- high flame, fry the pattice on one side for 1 minute and then turn it.

  • Using the back side of a non perforated ladle or a wooden press, gently press it flat.

  • Turn it on definite intervals, and fry it until it turns crispy and golden-brown in color.

  • Once it turns crispy and golden-brown in color, filter the oil and transfer it to a plate.

ALOO TIKKI IS READY.

HOW TO MAKE ALOO TIKKI CHAAT:

  • Add 2 aloo tikkis to a bowl and break them gently.

  • Add 2 tbsp of sweet curd, 2 tbsp of tamarind date chutney and 2 tbsp of green chutney to it. Also, add another 2 tbsp of sweet curd on top of it.
