CUSTARD ICE CREAM

Custard ice cream, also known as frozen custard is a frozen dessert made from milk, cream, sugar and egg yolks. The egg yolks gives it a richer, creamier and denser texture compared to the traditional ice cream. This custard ice cream can also be made without adding eggs, which could be much suitable for vegetarians.

Custard ice cream can be made using custard powder instead of eggs. Custard powder is basically a combination of corn starch, milk powder, food color and any flavouring. Vegan custard powder is also available, which is just corn starch, flavouring and food color.

ABOUT THE RECIPE:

I made this recipe using vanilla custard. There are so many flavours of custard powder available in the market, and any flavour can be used for this recipe. Also, I’ve used tutti fruity in this recipe as a garnishing, which is completely optional. Any chopped nuts or fruit syrup can be used for this recipe. It can also be served without any garnishing.

INGREDIENTS FOR CUSTARD ICE CREAM:

  • WHIPPING CREAM – 1 CUP
  • FULL FAT MILK – 2 CUPS
  • SUGAR – 1.5 CUP
  • CUSTARD POWDER – 2 TBSP

HOW TO MAKE CUSTARD ICE CREAM:

  • Mix 2 to 3 tablespoons of milk with 2 tablespoons of custard powder and keep it aside.

  • Add 2 cups of full fat milk to a wok/kadai and let it boil.

  • Once it starts to boil, add 1.5 cups of sugar to it. Mix it well.

  • Once it starts to boil completely, add the milk and custard mixture to the boiling milk. Stir it while you add the custard mixture, or it could form lumps.

  • It will start to thicken as soon as the custard mixture is added to it.
  • Once it thickens, turn off the flame and let it cool down.

  • Meanwhile, add 1 cup of whipping cream to a mixing bowl and whisk it until it reaches stiff peak.

  • Add the custard milk to the whipping cream and whisk it until it is well combined.

  • Pour the mixture to an airtight container and freeze it for about 6 to 8 hours.
