AMERICAN CHOP SUEY
Jump to RecipeAmerican chop suey is a popular Indo-Chinese dish commonly available in Indian-Chinese restaurants. It’s a crispy, sweet, tangy and slightly spicy noodle dish. It combines deep-fried crispy noodles, along with stir-fried vegetables in a thick, glossy sauce, which sometimes include chicken, shrimp or paneer.
American chop suey is usually served by placing crispy noodles on a plate, and pouring the hot vegetable/meat gravy over them just before serving. It gives bot crunchy and softened textures. It has a bold, slightly addictive taste- more sweet and sour compared to a typical Chinese food.
ABOUT THE RECIPE:
I’ve added chicken for this recipe. Chicken can also be replaced with shrimp, paneer or tofu. The vegetarian version of American chop suey is usually made by adding finely sliced vegetables like cabbage, carrots, beans and different kinds of bell peppers. Mushrooms can also be included.

HOW TO MAKE AMERICAN CHOP SUEY:
HOW TO PREPARE FRIED NOODLES:
- Boil 2 litre of water along with a teaspoon of salt and oil. Once it starts to boil, add the noodles to it. Let it boil, until the noodles are cooked completely.

- Once the noodles are cooked completely, turn off the flame. Drain the water, and rinse it with cold water.

- Add the cooked noodles to a mixing bowl along with 2 tbsp of cornstarch.

- Mix it well. All the noodles should be well coated in the cornstarch.

- Heat a kadai/wok, and add oil to it. I’ve used 2 cups of oil for this recipe. Once the oil is heated, add the coated noodles to it. It can be fried in batches.

- Turn them at definite intervals, and fry them until it turns crispy. It takes around 5 to 6 minutes on medium-high flame.

- Once it turns crispy, transfer it to a plate. Repeat the process with the remaining batches.

FRIED NOODLES IS READY TO BE SERVED.
HOW TO PREPARE SAUCE:
- To prepare the sauce, heat a wok/kadai, and add 2 tbsp of oil to it. Once the oil is heated, add the chopped garlic to it.

- Maintain the flame at medium-high. When the garlic starts to turn light golden brown in color, add the sliced chicken pieces to it.

- Saute it until the chicken is completely cooked through.

- Once the chicken is completely cooked, add the sliced onions, carrots and capsicum to it.

- Saute it for 30 seconds, and then add the sliced cabbage to it.

- Mix everything well. Add red chilly sauce, ketchup and dark soy sauce to it.

- Mix 1 tbsp of cornstarch with 2 tbsp of water to make cornstarch slurry. Also, add the cornstarch slurry to it.

- Add 1.5 cups of water to it, and mix everything well.
* Taste it and add salt only if required. Since, we’ve added dark soy sauce, this recipe doesn’t really require any salt.

- On medium-high flame, let it boil until it thickens and reaches the sauce consistency.

- The sauce shouldn’t be too thick or too watery. It should have a slightly pouring consistency.
- Once it reaches the perfect consistency, turn off the flame. It took around 5~7 minutes on medium-high flame.

SAUCE IS READY TO BE SERVED.
HOW TO SERVE AMERICAN CHOP SUEY:
- Place the fried noodle on a plate, and pour 1/2 cup of the prepared sauce over it.
- Also, add a fried egg on top of it.
- The remaining sauce can be served in a separate bowl on the side.
